  1. Melt the chocolate and butter together, then stir in the cocoa powder.
  2. Whisk the eggs, sugar, vanilla, and salt together in a large bowl.
  3. Add the chocolate and whisk to combine.
  4. Gently stir in the flour using a silicone whisk.
  5. Divide the batter between 12 mini-muffin cups that have been well greased.
  6. Bake then let cool slightly before transferring to a wire rack to cool completely.

Ingredients

  • 7 ounces (198 g) semisweet chocolate, chopped
  • ½ cup (113 g) unsalted butter, cut into 4 pieces
  • 3 tablespoons unsweetened cocoa powder
  • 1 ¼ cups (250 g) granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup (130 g) all-purpose flour

Instructions

  • Preheat the oven to 350°F. Spray the wells of a 24-cup mini-muffin pan with baking spray.
  • Microwave the unsweetened chocolate and butter in a bowl for 30-second intervals, stirring after each one until the chocolate is melted and smooth.
  • Whisk in the cocoa powder and let the mixture cool slightly.
  • Whisk the sugar, eggs, vanilla, and salt together in a large bowl until combined. Whisk the chocolate mixture into the sugar mixture until smooth.
  • Using a silicone spatula, stir in the flour until no dry streaks remain.
  • Spoon 1 tablespoon of batter into each muffin cup and bake for 12-15 minutes, until brownies are set and the tops are shiny and crackly.
  • Let the brownie bites cool in the pan for 10 minutes then use the tip of a knife to carefully remove the brownies from the pan and transfer them to a wire rack to cool completely.
