Ingredients
7ounces(198g)semisweet chocolate, chopped
½cup(113g)unsalted butter, cut into 4 pieces
3tablespoonsunsweetened cocoa powder
1 ¼cups(250g)granulated sugar
3largeeggs, room temperature
1teaspoonvanilla extract
½teaspoon salt
1cup(130g)all-purpose flour
Instructions
Preheat the oven to 350°F. Spray the wells of a 24-cup mini-muffin pan with baking spray.
Microwave the unsweetened chocolate and butter in a bowl for 30-second intervals, stirring after each one until the chocolate is melted and smooth.
Whisk in the cocoa powder and let the mixture cool slightly.
Whisk the sugar, eggs, vanilla, and salt together in a large bowl until combined. Whisk the chocolate mixture into the sugar mixture until smooth.
Using a silicone spatula, stir in the flour until no dry streaks remain.
Spoon 1 tablespoon of batter into each muffin cup and bake for 12-15 minutes, until brownies are set and the tops are shiny and crackly.
Let the brownie bites cool in the pan for 10 minutes then use the tip of a knife to carefully remove the brownies from the pan and transfer them to a wire rack to cool completely.
