Ingredients

  • 1 ounce (28 g) freeze-dried strawberries
  • 1 cup (226 g) unsalted butter, softened
  • 8 ounces (226 g) brick-style cream cheese, softened and cubed
  • 2 ½ cups (300 g) confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  • Add the freeze-dried strawberries to a blender or food processor and blend into a fine powder. Set aside.
  • Using a stand mixer fitted with the paddle attachment or a handheld mixer, beat the butter and cream cheese on medium speed until smooth.
  • Mix in half of the powdered sugar on low speed until well combined, then mix in the remaining powdered sugar until fully mixed in.
  • Add the freeze-dried strawberry powder and vanilla extract and mix on low-medium speed until fully combined, making sure to stop and scrape down the sides of the bowl as needed.

Notes

  • If your frosting is too thick, you can beat in heavy cream, one tablespoon at a time, until the desired consistency is achieved.
  • The frosting can be made in advance and frozen for up to 3 months. Thaw in the refrigerator overnight.
