Ingredients
1ounce(28g)freeze-dried strawberries
1cup(226g)unsalted butter, softened
8ounces(226g)brick-style cream cheese, softened and cubed
2 ½cups(300g)confectioners' sugar
1teaspoonvanilla extract
Instructions
Add the freeze-dried strawberries to a blender or food processor and blend into a fine powder. Set aside.
Using a stand mixer fitted with the paddle attachment or a handheld mixer, beat the butter and cream cheese on medium speed until smooth.
Mix in half of the powdered sugar on low speed until well combined, then mix in the remaining powdered sugar until fully mixed in.
Add the freeze-dried strawberry powder and vanilla extract and mix on low-medium speed until fully combined, making sure to stop and scrape down the sides of the bowl as needed.
Notes
If your frosting is too thick, you can beat in heavy cream, one tablespoon at a time, until the desired consistency is achieved.
The frosting can be made in advance and frozen for up to 3 months. Thaw in the refrigerator overnight.
