Inspired by the classic New Mexican dessert, this Sopapilla Cheesecake features a creamy cheesecake filling nestled in a flaky crescent roll dough with a cinnamon sugar topping.
Make the creamy cheesecake filling.
Layer a single crescent dough sheet in the bottom of a greased pan.
Top the dough with the cheesecake filling.
Place the second crescent sheet over the filling then pour melted butter over the top. Sprinkle with cinnamon sugar.
Bake until the dough is crisp and the filling is set.
