⅓cup(43g)all-purpose flour
¼cup(50g)granulated sugar
2tablespoonsunsweetened cocoa powder
¼teaspoonbaking powder
⅛teaspoonbaking soda
⅛teaspoonsalt
⅓cup(80ml)buttermilk, room temperature
2tablespoonsunsalted butter, melted and cooled
1egg, room temperature
½teaspoonvanilla extract
1ounce(30g)semisweet chocolate, coarsely chopped
Instructions
In a small bowl, whisk the flour, sugar, cocoa powder, baking powder, baking soda, and salt together.
In a separate bowl, whisk the buttermilk, melted butter, egg, and vanilla together. Add to the flour mixture and whisk until the batter is smooth. Stir in the chopped chocolate.
Divide the batter between two 10-ounce coffee mugs. Do not fill the cups more than half full or they may overflow.
Microwave, one at a time, on high for 90 seconds. (Every microwave is different. If the cake hasn't set, microwave in 10-second intervals until cooked through.) Let the cakes stand for 2 minutes.
Dust with powdered sugar or top with whipped cream and fresh berries. Enjoy!
Notes
You can also use Hershey's special dark cocoa powder.
Buttermilk is needed for the cake to be the correct texture. If you don't have access to buttermilk, you can make your own by mixing 1.5 teaspoons of lemon juice and enough whole milk to equal 1/3 cup. Let the mixture sit for a few minutes then it’s ready to use.
