Ingredients
1 ½cups(148g)old fashioned rolled oats
½cup(65g)all-purpose flour
½teaspoon baking soda
¼teaspoonsalt
½cup(113g)unsalted butter, at room temperature
½cup (135g)creamy peanut butter
½cup(100g)granulated sugar
½cup(100g)light brown sugar, packed
1largeegg, at room temperature
1teaspoonvanilla extract
½cup(85g)semisweet chocolate chips
½cup(100g)M&M candies
Instructions
Preheat the oven to 350℉ and line 2 baking sheets with parchment paper.
In a medium bowl, whisk the oats, flour, baking soda, and salt together.
Using a stand mixer fitted with the paddle or with a handheld electric mixer and large bowl, beat the butter, peanut butter, and both sugars until light and fluffy, about 2 minutes.
Beat in the egg and vanilla.
Add the oat mixture, and mix on low speed just until combined.
Fold in the chocolate chips and M&M's with a silicone spatula.
Using a 1 ½ tablespoon cookie scoop place mounds of dough 2 inches apart onto the prepared baking sheets.
Bake cookies for 10-12 minutes until the edges are slightly browned. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
