Yields: 6 servings
- 1 cup all-purpose flour
- 1 teaspoon salt
- 3/4 cup larger or favorite beer
- 1 cup plain breadcrumbs
- 2 medium sweet onions cut 1/2 inch thick slices.
Spray a large baking sheet with nonstick spray; set aside.
In a medium bowl, combine the flour and 1/2 teaspoon of the salt. Whisk in enough beer to make a pancake like batter. It should be fairly thick. In a large liquid measuring cup, combine the breadcrumbs and remaining salt.
Separate the onion rings. Dip each ring into the batter, shake off excess. Place in the breadcrumbs; gently shake the cup back and forth until onion ring is fully coated. Place the onion rings on the prepared pan. Freeze for 20 minutes.
Preheat the oven to 450ºF. Bake for 7 to 10 minutes or until the bottoms are lightly browned. Flip rings over. Bake for an additional 7 to 10 minutes, until golden. Serve Immediately.
