Coconut Water and Pineapple Popsicles

The most delicious 2 ingredient popsicles EVER!

  • 1 cup fresh pineapple pureed
  • 1 cups plain coconut water


  • Fill each popsicle mold 1/3 of the way with the pineapple puree. Fill the molds the rest of the way with the coconut water. Using the handle of a spoon, stir the mixture gently in each mold. (A chopstick works great as a stirrer also.) Insert the handles or popsicle sticks into the molds. Freeze for at least 4 hours.
  • To serve, run the molds under warm water for 15 seconds. Pulling straight up, slide the popsicles out of the molds.
