Profiteroles are made from choux pastry baked until puffed and crisp. They are filled with homemade pastry cream and topped with a drizzle of warm ganache.

Make the choux pastry dough.

Portion the dough and bake until golden and firm.

Make the pastry cream.

Slice the cooled pastry shells in half and fill with pastry cream.

Make the chocolate ganache.

Spoon ganache over filled pastries.
