MAKING THE CUSTARD
Milk, sugar, and vanilla are warmed to 180°F. The gelatin is bloomed then stirred into the warm mixture. Once the mixture cools to 120°F, heavy cream is added.
REFRIGERATE
Pour the custard into ramekins or jars and refrigerate until fully set. This can take up to 8 hours.
Make a simple raspberry sauce with pureed raspberries, sugar, and lemon juice.
