Morning Glory Muffins

These Morning Glory Muffins are perfect for those mornings when you want to feel healthy, but a smoothie won't do.

Packed with nutritious ingredients like carrots, apples, raisins and walnuts, they'll warm you up and add a little sweetness as you start your day.

In a large mixing bowl, whisk the flour, brown sugar, cinnamon, baking soda, salt, ginger, and cloves together.

Add the raisins along with the carrots, apple, and walnuts to the flour mixture. Toss together with a silicone spatula.

Whisk the eggs, butter, oil, orange zest, and vanilla together until well combined.

Add the liquid to the dry ingredients and stir with a silicone spatula until just combined.

Divide the batter evenly between the muffin cups and bake for 18-22 minutes, until golden brown.

1. Cool in the pan for 5 minutes then transfer to a wire rack to cool completely.
