BAKING APPLES

Granny Smith apples are known as one of the best apples for baking. They hold their shape better than almost any other variety. 

Prep Time: 20 Min

2 ¼ cups all-purpose flour ½ cup granulated sugar ¼ cup brown sugar 1 ½ teaspoons baking powder ½ teaspoon baking soda ½ teaspoon ground cinnamon ½ teaspoon salt ¾ cup buttermilk ½ cup unsalted butter 2 large eggs 1 teaspoon vanilla extract 1 cup diced apple

Step 1

Make the batter. Combine the dry ingredients in a large bowl. Combine the wet ingredients in a separate bowl. Pour the wet ingredients into the dry ingredients and stir just until combined.

Step 2

Add the apple. Fold in the chopped apple until well mixed.

Step 3

Transfer to pan. Divide the muffin batter between paper-lined muffin cups.

Step 4

Make the streusel. Mix flour, brown sugar, cinnamon, and melted butter until thick and crumbly.

Step 5

Sprinkle streusel. Sprinkle the topping over the batter in each muffin cup.

Step 6

Bake. Bake at 400°F for 12-15 minutes. Allow the muffins to cool then drizzle with a simple powdered sugar glaze.

While these apple streusel muffins are suitable for any time of the day, I must say they complement a cup of warm coffee so nicely!
