Delicious Skillet Chicken and Rice with Leeks and Kale is an easy dinner option. With just a handful of ingredients, you can have a complete meal on the table within 30 minutes! Stirring dry rice into a mixture of sauteed garlic, leeks, and kale coats the grains and adds a deeper flavor. This method also toasts the rice so it remains firm. Today, I introduce my favorite way to make chicken and rice. I often turn to meals that are quick and easy, but also healthy. I mean, who has time to prepare an elaborate dinner during a busy work week?

Typically, I try to share oven prepared recipes with you, like this tomato roasted pork loinbaked teriyaki chicken or spicy sausage pizza. But, this skillet chicken is just too good not to share!

My favorite thing about this recipe is it’s easy and takes about 30 minutes to prepare.

  • Salt
  • Pepper
  • Coconut oil
  • Unsalted butter
  • Garlic
  • Kale
  • Leeks

  • Chicken broth

Skillet Chicken and Rice with Leeks and Kale

Have dinner on the table in under 30 minutes

The steps to making skillet chicken and rice with leeks and kale are quick and easy. You start by adding salt and pepper to the chicken. Then, sear it on both sides in a hot skillet with coconut oil. Take the chicken out of the pan and set it aside once browned.

Sautee the garlic, leeks, and kale with butter in the same skillet. Stir in the rice and saute for a few seconds.

Stir in the seasoning packet from the rice and the chicken broth. Return the chicken to the skillet, cover, and cook until cooked through.

Remove the chicken and continue cooking the rice until most of the liquid has been absorbed.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • salt and pepper to taste
  • 2 tablespoons coconut oil
  • 2 tablespoons unsalted butter
  • 2 (6-ounce) boxes UNCLE BEN’S® Flavored Grains Long Grain & Wild Rice, Original Recipe
  • 6 garlic cloves minced
  • 4 and 1/2 cups chicken broth
  • 3 thinly sliced leeks white and light green parts
  • 2 cups chopped kale ribs removed

Instructions

  1. Salt and pepper both sides of each chicken breast. Heat the oil in a 12-inch skillet over medium-high heat. Carefully arrange the chicken breasts in the skillet and cook until lightly browned on all sides, about 6 minutes. Transfer the chicken breasts to a plate and set aside.

  2. Pour off excess fat left in the pan. Add the butter to the skillet and heat over medium heat. Add the garlic, leeks, and kale. Cook about 5 minutes, until the vegetables have softened slightly. Stir in the rice and cook for 1 minute.

  3. Stir in the broth and rice seasoning packets. Nestle the chicken down in the rice and bring to a low boil. Cover, reduce heat to medium-low, and cook for 10 minutes or until the chicken registers 165 degrees on an instant read thermometer.

  4. Remove the chicken from the rice and place it on a clean plate. Cover the plate with foil and set aside. Cover the rice and continue cooking for another 10 minutes or until the liquid has been absorbed. 

  5. Season with salt and pepper to taste and serve with the chicken
