Oven Roasted Sweet Potatoes

This is one of my favorite ways to eat a sweet potato.  Most of the time I will just wrap them in foil and bake them for a couple hours because that is the healthier way to eat them.  But we all know I can’t resist a succulent, sweet dish.

How to roast sweet potatoes?

Peel and cube the potatoes then lay them in an even layer on a baking sheet lined with aluminum or parchment paper. The potatoes will get crispier without either of those but they tend to stick to the pan so I always line it.

Drizzle oil, brown sugar, cinnamon, and honey evenly over the sweet potato cubes. Roast the potatoes for 30 minutes at 375ºF.

Ingredients

  • 4 medium potatoes peeled and diced into 1-inch cubes
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons honey

Instructions

  • Preheat oven to 375ºF.
  • Line a baking sheet with parchment paper or aluminum foil. Lay the cubed sweet potatoes out in a single layer on the baking sheet. Drizzle the oil, cinnamon, sugar, and honey over the top of the potatoes. Roast in the preheated oven for 25 to 30 minutes or until tender.
  • Remove from the oven and transfer the potatoes to a serving dish.
