Most of you already know that I’m a huge fan of yogurt. It’s my go-to for breakfast alongside a banana or two.

I enjoy all types of yogurt. I’ve used a wide variety of them in many baked goods here on the blog. It tastes amazing on its own and does wonderful things to baked treats.

These cupcakes are one of my most favorite baked goods that call for yogurt. I have also used it in this banana bread which is well loved by many of you. I enjoy using yogurt in many ways. Like for the filling in this fall tart.

With the weather warming up, finally, I’ve been trying to make more treats that don’t feel so heavy. Light and fresh is the way to go when it is sweltering outside!

I wanted to make another dessert similar to the tart I mentioned above but didn’t want it to involve baking. You know, a light no-bake dessert that is perfect for warm weather.

I saw Dannon® Light & Fit® at Walmart and thought their Strawberry Cheesecake Greek Yogurt would be great for this no-bake dessert idea. It’s light, flavorful, and you don’t have to feel guilty about eating it.

I decided on making mini berry cheesecake pies with the Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt by adding it to Keebler® Ready Crust® Mini Graham Cracker Pie Crust, and topping it with fresh berries and Reddi-wip®. I also decided to add a little honey, lemon zest, and chopped walnuts.

Ingredients for Mini Berry Cheesecake Pies

I always have some variety of fresh berries on hand during the spring and summer. If you don’t have strawberries or raspberries, you can use any other berry that you may already have.

I really like the way the lemon zest brightens the flavors. And walnuts are really only for texture; I have to have texture in my food! But the lemon zest and walnuts are completely optional.

There’s so much flavor going on in these mini pies! And they come together in a snap. The Mini Berry Cheesecake Pies can be ready in five minutes! How’s that for a quick dessert?

Ingredients

  • 6 Keebler® Ready Crust® Mini Graham Cracker Pie Crust
  • 3 containers Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt
  • 6 fresh strawberries diced
  • 12 fresh raspberries sliced
  • 6 tablespoons honey
  • Zest of 1 lemon
  • Reddi-wip® for garnish
  • 3 tablespoons chopped walnuts for garnish, optional

Instructions

  1. Fill each pie Keebler® Ready Crust® Mini Graham Cracker Pie Crust half a container of Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt. Use the back of a spoon to smooth the yogurt evenly in the pie crust.
  2. Layer 1 diced strawberry and 2 sliced raspberries over the top of the yogurt on each pie.
  3. Drizzle 1 tablespoon of honey over the berries on each pie.
  4. Sprinkle the top of each pie with a little lemon zest.
  5. Garnish with Reddi-wip® and walnuts.
  6. Serve immediately!
