You may have already figured out that I’m a snack girl. But in no way do I sit around munching on cookies and cupcakes all day long. Nope! I often reach for fresh fruit (my fav), raw veggies, baked chips, or plain popcorn.
Everything you see here on this site gets passed on to other willful bellies. Seriously, if I ate every single thing that I baked for this site I wouldn’t be able to fit out of my front door. What a sad life that would be.
One of my favorite healthy treats to snack on is sweet potato chips. They are thin, crispy, and oh so tasty. It wasn’t until recently that I began to make them at home. Not only is it less heavy on my wallet to make them at home, this method is so, so easy. The hubster actually showed me this! And it’s life changing.

Peel and slice your sweet potato. Rinse the slices, dry the slices, and microwave them. That’s it!

Microwave Sweet Potato Chips
Easy homemade sweet potato chips made in the microwave!
Peel and slice the sweet potato with a mandolin. Soak the slices in cold water for 3 mins; rinse thoroughly. Arrange the slices in a single layer between paper towels, pressing down to remove any excess moisture. Line a microwave-safe plate with a layer of paper towels. Arrange slices in a single layer over the paper towel. Microwave on high for 3 minutes. Flip slices over, microwave on high for another 3 minutes. Transfer cooked slices to a cooling rack. Repeat with the remaining slices. Sprinkle chips with salt if desired and enjoy!
