    We're well into pumpkin season and I have a ton of pumpkin recipes on the site. There's something for everyone!

They take a while to prepare. The cookie dough needs to refrigerate for at least 2 hours before baking and the caramel sauce needs to be cooled completely before filling the cookies.     These bars are like gooey s’mores sandwiched together with pumpkin pie in the middle. It’s a wonderful recipe with so much rich, decadent flavor. The bars are sweet and go great with a glass of milk. I used cinnamon, ginger, and cloves for spices in the pumpkin filling but you can the spices you prefer most in pumpkin pie. Bake the bars until they are no longer wiggly and keep them stored in the refrigerator.

    Pumpkin Oatmeal Cookies

    These cookies are soft and chewy. One egg yolk is used as a binding and this small amount keeps the cookies from being cakey. There’s a ton of oats, making each cookie hearty and full of texture. Molasses and cinnamon offer warm fall flavors without overpowering the pumpkin flavor. Mix in a cup of your favorite dried fruit or chocolate chips to add variety to the recipe.

    Halwa is probably the most popular Indian dessert (along with kheer). The most common types of halwa are made using semolina and whole-wheat flour. This one is made using pumpkin, sugar, ghee and coconut. You may use coconut oil in place of ghee to make this vegan, but if you ask me, halwa without ghee is just not the same!

    Dulce de Leche Pumpkin Bars

    This recipe for Dulce de Leche Pumpkin Bars gives you the flavor of a pumpkin pie without the hassle of making a pie.
