We spent the weekend celebrating, hanging out with friends, and being lazy. Now, I am having a severe case of the Mondays. I want to continue my lazy streak, but I know that is impossible. There’s just too much on my to-do list for the week.
First thing is first, though. I must tell you all about this addictive snack mix.

The idea of this snack mix came to me a few weeks back when my mom came for her final visit here in VA. Mom loves popcorn. I have very vivid memories of her snacking away on popcorn almost every single day when I was young. So while she was here I wanted to make a special snack, just for her.
I’ve seen several different snack mix and muddy buddy recipes floating around Pinterest. It was hard to decide which direction to go in. The only logical solution was to combine the two different snacks into one.
Today’s snack mix starts with plain popped popcorn and plain Chex cereal. The cereal and popcorn get coated generously with melted white chocolate, ginger snap crumbs, and powdered sugar.
When I presented this to mom she lost all willpower and self-control. Although she tried very hard to resist eating the entire batch, she kept returning to the bowl for “just one more handful”.
Be warned. This stuff is scary dangerous.
Ginger Snap Popcorn Snack Mix
- Combine the popcorn and cereal in a large bowl.
- Melt white chocolate according to the package directions. Drizzle the melted chocolate over the popcorn mixture. Stir gently to coat.
- Sprinkle in the crushed ginger snaps and powdered sugar. Stir once more. Allow the mixture to set until the chocolate hardens. Store in an airtight container.
