I am a complete sucker for Outshine’s Coconut Waters with Pineapple popsicles.  They are my absolute favorite of all time.  I like to stockpile these bad boys when I can find them.  So far, though, I haven’t been able to locate any around where I now live.  Virginia is disappointing me in the grocery store factor…

As hot as it has been lately, I just want frozen pineapple water on a stick.  It is completely satisfying.  So decided to create my own version of Outshine’s best popsicle flavor.

These popsicles are supremely easy and delicious.  They only require two ingredients:  your favorite plain coconut water and fresh juicy pineapple.

Tada!  Coconut Water and Pineapple Popsicles, a frozen treat you will go crazy for.

Ingredients

  • 1 cup fresh pineapple, pureed
  • 1 cups plain coconut water

Instructions

  • Fill each popsicle mold 1/3 of the way with the pineapple puree. Fill the molds the rest of the way with the coconut water. Using the handle of a spoon, stir the mixture gently in each mold. (A chopstick works great as a stirrer also.) Insert the handles or popsicle sticks into the molds. Freeze for at least 4 hours.
  • To serve, run the molds under warm water for 15 seconds. Pulling straight up, slide the popsicles out of the molds.
