I love a good sandwich for lunch. Most of the time I am sitting in front of the computer while I eat lunch so my food has to be mess free and easy to handle. Sandwiches are the perfect solution.
Plus there are so many ways you can dress up a sandwich to make it delicious as well as healthy. Take this Chicken Guacamole Club Sandwich for example.
The chicken is high quality and fresh from the deli. The bacon is… well, it’s delicious! The mozzarella is the real stuff, not that imitation junk you find shredded in a bag. The guacamole is packaged but I used an organic brand I found in the produce section. And there are fresh crisp Romaine leaves.
Sounds pretty darn tasty, right?
Everything is fairly healthy, including the bread! I’m actually quite picky when choosing bread at the market. I have to check the date and feel the loaf to make sure it’s soft and fresh. And I always search for bread that is loaded with seeds or grains.
For today’s club sandwich, I decided to use and Pepperidge Farm® Harvest Blends Seeded bread.
This bread is full of sunflower, flax, and sesame seeds. It’s whole grain and full of fiber. Exactly how good bread should be! Not only is it healthy, it’s also tasty.
The great flavor makes it perfect for sandwiches and toast.

Chicken Guacamole Club Sandwich
- 1 loaf Pepperidge Farm® Harvest Blends Seeded bread
- 1/2 pound thick cut chicken breast any flavor from the deli
- 8 ounces fresh mozzarella. sliced thin
- 5 pieces of bacon cooked, cooled, and broken in half
- Romaine lettuce ribs removed
- 8 ounces chunky guacamole
Arrange 10 slices of bread across a cookie sheet. Top 5 pieces of the bread with a few slices of chicken followed by a few slices of mozzarella. Bake under the broiler for 30 seconds, or until heated and cheese begins to melt.
Remove from oven and top the chicken and cheese slices with 2 pieces of bacon and some Romaine lettuce.
Spread guacamole over one side of the naked pieces of bread and place the slices guacamole side down on top of the lettuce to finish the sandwich. Serve immediately.
