I have a great savory recipe for you today. And it’s one of my new favorites. It’s a close runner-upΒ to these cheesy meatball bombs or these creamy ranch mashed potato cakes.

It’s hard to get creative when it comes to dinner. All of my creativity goes into things like cookies and cupcakes. All the sweet stuff. You know how I do.

But I have a favorite side or sometimes it’s an appetizer. It’s something that I can never grow tired of. Something that I became hooked on while working in a wing joint when I was younger.

The good old fashioned onion ring. I could eat them every day. No lie.

I’ve made these onion rings a lot over the past few years because they are easy and semi-healthy. I used to batter and fry a lot of foods like chicken, cube steak, and vegetables. I’m from the south. I own a cast iron and believe that everything tastes better when fried.

I learned the southern ways from my mom, who learned from her mom, who learned from her mom. You get the point. It’s in my blood.

However, fried food isn’t so good for my blood. I try to steer clear of it as much as possible. That is why I started making these baked onion rings.

The concept is the same, only better for you. And the batter must have beer in it. I love the flavor of beer battered anything!

Coat the rings with a thick beer batter and toss them in breadcrumbs. The breadcrumbs give the rings a phenomenally crunchy exterior. Another great perk to this recipe is the batter has no egg, making vegan-friendly.

Baked Beer Battered Onion Rings

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup larger or favorite beer
  • 1 cup plain breadcrumbs
  • 2 medium sweet onions cut 1/2 inch thick slices.

Instructions

  1. Spray a large baking sheet with nonstick spray; set aside.
  2. In a medium bowl, combine the flour and 1/2 teaspoon of the salt. Whisk in enough beer to make a pancake like batter. It should be fairly thick. In a large liquid measuring cup, combine the breadcrumbs and remaining salt.
  3. Separate the onion rings. Dip each ring into the batter, shake off excess. Place in the breadcrumbs; gently shake the cup back and forth until onion ring is fully coated. Place the onion rings on the prepared pan. Freeze for 20 minutes.
  4. Preheat the oven to 450ΒΊF. Bake for 7 to 10 minutes or until the bottoms are lightly browned. Flip rings over. Bake for an additional 7 to 10 minutes, until golden. Serve Immediately.
